Easy Prosecco Popsicle "Poptails"

The hottest poolside trend this summer combines adult beverages and a childhood favorite, popsicles! Typically served with Prosecco, popsicles are now being paired with Rose, white wine, and even tequila! Pre-made "Poptails" are even available through online companies like FrutaPOP. Stay cool with the following recipe that is both adult and kid-friendly.

 

What you will need:

 

1 1/4 cup Fruit (I used frozen strawberries and blueberries)

1/8 cup Sugar 

1/4 cup Water or juice (I used coconut water)

Herbs (I used mint and basil from my garden)

Popsicle molds like these ones (1 1/2 cups of fruit mix per 6-pack)   

Prosecco or Rose

 

Make the popsicles the night before you plan on serving them.

 

If you aren't sure how much to make, fill the popsicle molds with water and pour into a measuring cup to see how much you will need to fill all of them. The molds I have require about 1 1/2 cups of fruit mix. In a small sauce pan, heat the fruit and sugar on low until the sugar is melted and the fruit breaks down it's natural sugars (about 10-15 minutes). I added mint to the strawberries and basil to the blueberries in the last few minutes to infuse the flavor (leaves will wilt). 

Put the fruit slurry into a blender and add water, juice, or coconut water. Blend well. I also added a few more fresh herbs and pulsed the blended a few times. My blender has a strainer so it worked well to keep most of the herbs out of the popsicles, but a few pieces won't hurt. 

 

Once the popsicles are frozen, you are ready to serve with your favorite Prosecco or Rose!

 

I left the booze out of my popsicles, but you can experiment with your own different "poptail" blends. Just remember, alcohol doesn't freeze well and you might end up with a slushy instead - which actually might not be too bad either!
